DOC FCO Pignolo di Rosazzo

Indigenous vine already cultivated in the 700s, then forgotten for a long period of time, it was revaluated several years ago and recovered from the vineyards of the Rosazzo Abbey.

This particular red wine stands out for its spiced aroma and tannic quality. For this reason, in addition to a late season harvest, it also requires extended ageing time in oak barrels and bottle. This wine has a unique personality and complexity, in addition to an amazing ageing potential.

Training system: Unilateral Guyot

System density: 5680 vines per hectare

Yield: 40/45 quintals per hectare

Wine making

Manual harvesting in trays, late season with very ripe grapes.

Maceration of the grapes in open barrels with no temperature control: 25/30 days.

Spontaneous alcholic and malolactic fermentation.

Ageing in new tonneaux and oak barrels for 16/24 months

Bottling: with no filtration

Pairings: savoury meat dishes, aged cheeses

Serve at 18°C.
